In the previous blog, I mention consistently high sugar levels will create consistently high insulin levels which leads to inflammation and ultimately breaking down your collagen. To slow down the insulin production, eat sugar with fiber, healthy fat (avocado, walnuts, coconut oil, etc.) and protein. Here’s a great recipe to try for yourself!
Guilt Free Muffins – Serves 14
14 Medjool Dates
1/4 cup boiling water
1/4 cup plain greek yoghurt
3 eggs
2 cups almond meal
2 tbsp coconut oil
1.5 tsp baking soda
1 cup walnuts
1 can coconut milk
1 tbsp 100% pure maple syrup
Preheat oven at 150 degrees Celsius or 300 degrees Fahrenheit. Line muffin pan with baking paper.
Mix dates and boiling water in the food processor. Pulse the walnuts with dates once or twice
Beat eggs and coconut oil. Add dates and yoghurt to the eggs. Mix in the almond meal and baking soda Bake muffins for 20 minutes or until golden brown. Bring the coconut milk and maple syrup to a slow boil, stirring for 10 to 15 minutes until thickened.
